I’m not sure how to make churros. I’m sure you can find lots of recipes online. But you might consider making Italian Cannoli’s because they are easier to “fill”. Churros usually aren’t stuffed as they are very narrow inside the actual pastry “tube”. You could make a variety of sweet cheese fillings like Ricotta cheese with lavender honey & chocolate shavings & Mascarpone cheese mixed with nutella (chocolate/hazelnut spread).

    Savory Jalapeno Chili Cheese Churros

    Ingredients
1 cup plus 2 tbsp. water
    3 tbsp. butter, diced
    pinch salt
    3/4 cup all purpose flour
    1/4 cup white cornmeal
    1/2 tsp. chili powder
    2 large eggs
3 fresh jalapeno peppers, stemmed, seeded and minced
2 tbsp. grated Monterey Jack cheese
    peanut oil for frying

    Directions
Combine water, butter and salt in a medium saucepan over medium heat. Cook, stirring, until butter is melted. Remove the pan from the heat and stir in flour, cornmeal and chili powder with a wooden spoon. Cook, stirring, 1 to 2 minutes over medium high heat until dough forms a ball. Transfer the dough to a food processor and let stand 5 minutes. Blend in eggs one at a time. Add jalapenos and Monterey Jack. Process until smooth. Transfer dough to a piping bag fitted with a large star tip. Fill a large skillet 2 inches deep with peanut oil. Heat oil to 375 degrees. Working in batches, pipe 10 inch strips of the dough into the hot oil. Fry strips about 3 minutes per side until golden brown. Drain churros on paper towels. Serve hot.
    Makes about 1 dozen churros.
